Crispy Fried Chicken

There’s nothing quite like a plate of homemade Crispy Fried Chicken—golden, crunchy on the outside, juicy and tender on the inside, and packed with delicious flavor. This classic comfort food is perfect for family dinners, weekend gatherings, picnics, or anytime you’re craving something satisfying.

The secret to great fried chicken starts with properly seasoning the chicken. A flavorful buttermilk marinade helps tenderize the meat while adding extra flavor. Letting the chicken marinate before frying gives you a juicy texture and allows the seasonings to soak in.

For the perfect crispy coating, combine flour with your favorite spices, such as paprika, garlic powder, onion powder, black pepper, and a little salt. Coat each piece thoroughly, pressing the flour mixture onto the chicken to create those irresistible crunchy edges.

Fry the chicken in hot oil until the coating is beautifully golden brown and the chicken is fully cooked. Avoid overcrowding the pan, as this can lower the oil temperature and make the coating less crispy.

Serve your Crispy Fried Chicken hot with mashed potatoes, coleslaw, biscuits, corn, or your favorite dipping sauce. Whether you’re cooking for your family or preparing a comforting weekend meal, this classic recipe is guaranteed to be a crowd-pleaser.

Once you try homemade Crispy Fried Chicken, you may never look at takeout the same way!

Prep Time: 20 minutes
Marinating Time: 2–4 hours
Cook Time: 20–25 minutes
Servings: 4–6

Ingredients

For the Chicken

  • 1 kg chicken pieces (drumsticks, thighs, or wings)
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

For the Crispy Coating

  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon chili powder (optional)
  • ½ teaspoon baking powder

For Frying

  • Vegetable or canola oil, enough for frying

Instructions

  1. Marinate the chicken: Place the chicken in a large bowl. Add the buttermilk, salt, black pepper, paprika, and garlic powder. Mix well, cover, and refrigerate for 2–4 hours.
  2. Prepare the coating: In a large bowl, combine the flour, paprika, garlic powder, onion powder, black pepper, salt, chili powder, and baking powder.
  3. Coat the chicken: Remove each piece of chicken from the marinade, allowing excess buttermilk to drip off. Dredge thoroughly in the seasoned flour, pressing the coating firmly onto the chicken for a thicker, crunchier crust.
  4. Heat the oil: Heat about 5 cm (2 inches) of oil in a deep, heavy pan to approximately 175°C (350°F).
  5. Fry the chicken: Carefully place the chicken into the hot oil without overcrowding the pan. Fry in batches until golden brown and fully cooked, turning occasionally. Cooking time will vary by piece size, usually about 10–15 minutes per batch.
  6. Drain: Transfer the fried chicken to a wire rack or paper towels to remove excess oil. Allow it to rest for a few minutes before serving.
  7. Serve: Enjoy hot with coleslaw, mashed potatoes, biscuits, corn, or your favorite dipping sauce.

Tip: For an extra-crispy crust, let the flour-coated chicken rest for 5–10 minutes before frying. Use a food thermometer to make sure the thickest part of the chicken reaches 74°C (165°F).
